Zesty Lemon Bars

ZESTY LEMON BARS

INGREDIENTS

Crust

2 cups

Flour

1/2 cup

Powdered sugar

1 cup

Butter or margarine

Filling

6 Tbsp

Lemon juice & rind

2 cups

Sugar

Eggs

1 Tbsp

Flour

1 Tbsp

Baking powder

Glaze

2 cups

Confectioners’ sugar

3-4 Tbsp

Fresh lemon juice

DIRECTIONS

Crust – Sift flour and powdered sugar together thoroughly. Cut in room temp butter using a pastry cutter or stand mixer. / Pat into a 9″x13″ pan and bake 20 minutes at 350°

Filing – In a mixing bowl or stand mixer, mix together beaten eggs, sugar, flour, baking powder, lemon juice and rind. / Pour on baked crust and bake another 20 minutes.

Glaze – Place confectioners’ sugar in a medium bowl or liquid measuring cup; stir in lemon juice (glaze should be thick, yet pourable). Add more sugar or lemon juice, as necessary, to achieve desired consistency.

FINISHING

Drizzle with powdered sugar frosting and sprinkle with rind zest.
