INGREDIENTS

Olive oil

Yellow onion, chopped

Cloves garlic, chopped

1 lb

Ground turkey

1/2 Tbsp

Cumin

2 tsp

Paprika

1 Tbsp

Chili powder

1 cup

Uncooked quinoa

Large sweet potatoes, chopped

28 oz

Can crushed tomatoes

15 oz

Can black beans

15 oz

Can kidney beans

15 oz

Can corn

2-3 cups

Chicken stock

12oz

Can IPA (or additional chicken stock)

FOR GARNISH

Cheese

Sour cream

Cilantro

Avocado

DIRECTIONS

In large saucepan, warm olive oil. Add in ground turkey. Once meat is cooked, add in onion, garlic, and spices. Cook until onions are soft. Transfer mixture into a crock pot. / Add in quinoa, sweet potatoes, tomatoes, beans, corn, chicken stock, and beer. Cook on high for 4 hours or until potatoes are soft. / Top with cheese, cilantro, sour cream, and avocado.
